1/2 cup granulated sugar
3 large eggs
1/2 teaspoon vanilla extract
1/4 teaspoon almond or coconut extract
1 1/2 cups all-purpose flour
1/2 cup almond flour
1 teaspoon baking powder
1/4 teaspoon salt
Zest of 1 lemon

Combine the candied peel, cherries, raisins and rum in a bowl. Cover and let stand for 24 hours, stirring once or twice.
Preheat the oven to 350°F (175°C). Grease and line a loaf pan.
Whisk together the all-purpose flour, almond flour, baking powder and salt.
Beat the butter and sugar until light and creamy. Beat in the eggs one at a time, then add the vanilla, almond or coconut extract and lemon zest.
Add half of the dry ingredients, followed by the milk, then the remaining dry ingredients. Mix just until combined.
